Butchery & Curing – Using the Whole Hog
*** SOLD OUT *** Come join Lesley as Girls on the Road Again are holding an awesomely amazing one day workshop in Auckland led by the fabulous Hannah Miller “A Lady Butcher”
This is a hands-on workshop and we’ll begin this workshop by demonstrating how to split a side of pork into primals, subprimals, retail, and charcuterie cuts using New Zealand, British, and American styles of butchery.
Divided into two groups, each group will break down a quarter carcass with guidance from our instructor.
We’ll break for lunch, complete with charcuterie and paired craft beers or local wine.
After lunch, we each choose a cut to cure then work with the instructor to choose a spice blend to their liking and massage it in.
By the end of workshop will have broken the pig down into cookable cuts like ribs, steaks, roasts, & chops and cured a piece to enjoy as charcuterie at a later date!
At the finish the day with an afternoon feast of bbq meats and all the sides, complete with paired craft beer or local wines.
